So I decided I wanted to count how many Power Stars you can have in total within the overall Mario series since it mainly helps with AP, Speed, and Sealing. Anyways, countdown.

Super Mario 64/DS

In 64, you can have a total of 120. 64 DS however allows you to gain 150. Since they're from the same location, we will use DS's amount. You can collect a total of 150, in addition with the Jumbo Star. A Jumbo Star requires 80 Power Stars to counter, so it would have the power of 80 Power Stars.

Total: 230

New Super Mario Bros. DS

In Mario Vs Luigi, you can set it to collect 10 Power Stars in total to win for 5 rounds to win. You can win a total of 3 rounds max.

Total: 30

Super Mario Galaxy

Neither Mario nor Luigi ever actually keep the Power Stars, Green Stars, nor Grand Stars. Rosalina does however, along with Bowser taking them. You collect 114 Power Stars, including the Red Star and Green Stars, but not Grand Stars.

There are a total of 7 Grand Stars. We aren't given a comparison for a Grand Star, we just know they're stronger than a Power Star. However, because Bowser took Grand Stars over Jumbo Stars would imply they're greater in strength, as he resorted to taking the former. So we should be able to also scale it to 80.

Super Mario Galaxy 2

Mario nor Luigi ever keep them either, but Starship Mario does at least. There are 236 Power Stars, including the variations. There are 6 Grand Stars.

Super Mario Odyssey

The cap for the Odyssey (which Mario can keep so he too would gain these) is 999, however you can still carry more Power Stars on-hand via the shop. There's no technical limit. It is however possible to buy another 999 without breaking the game and keeping them, so we can use this as a lowball.

Mario Pinball Land

The maximum you can collect is 35 Power Stars.

Mario Party 1-3

You can collect a total of 99 in a single game. However, finishing a Mario Party game keeps your total star count. Since the coins go into triple digits, I will assume the same can be done for stars and the maximum is 999 per game up until Mario Party 4.

You can collect up to 999 stars, simple as that.

There is a Star Bank that allows you to buy things for stars. So I'll add up how much it costs for everything.

Mario Party 9

This is where it gets interesting due to Mini-Stars. A Power Star is composed of 5 Mini-Stars, so we'll do basic division.

The game's plot makes it really interesting when the Mini-Stars are treated as actual stars. Which means Bowser took the stars from the entire universe's sky. And we know it extends to farther space since we still see no stars.

Now, this is lowball, but there's at least 1 septillion stars. A single Power Star equals 5 Mini Stars. That's two hundred sextillion Power Stars, wow.
